Chicken Rice Divan Bake

Every week I plan a menu for seven days and then make the grocery list based on that menu.  My menu can change drastically from week to week because if I eat something too much I begin to dislike it and then I can’t eat that meal anymore.  If I run out of ideas as to what I would like to eat,  I try a new recipe and pray that both my boyfriend and I will enjoy it.  Sometimes the way that I find a new recipe on the internet is to google a few key ingredients that I think would taste delicious together and then pick what recipe appeals to me.  That is how that I happened upon the Chicken Rice Divan Bake at About.com

I was a bit skeptical about this recipe at first because I thought the ingredients once baked would be dry and hard to swallow.  With that in mind I decided against using boneless skinless chicken breasts as it is the part of the chicken that I have most difficult time swallowing.  I chose instead to use  boiled chicken thighs meat and I included an additional cup of this meat to the recipe.  I also add an additional cup of meat to the recipe.  The rest of the ingredients were measured according to the  recipe.  The flavor of this recipe left me  wanting more but I resisted the urge to indulge in a second helping.  With 8oz of sour cream in the recipe it was wise for me to quit while I was ahead. I was surprised by how much I enjoyed this meal and although I could not make it every week, I wouldn’t exactly let this recipe card collect dust on my fridge.  So if you are looking for a new casserole meal that is delicious without being too rich for the stomach, give this meal a try.
